Made by Liverpool’s first bean-to-bar chocolatiers, Table Chocolate, this limited edition Haiti 59% is a warmly spiced bar that brings together rich cacao and fragrant chai spices. It has the depth of Haitian cacao, balanced with comforting notes of spice for a chocolate that feels bold, aromatic, and a little unexpected.
The cacao is sourced from Produits des Îles S.A. (PISA), a social enterprise working with around 2,000 smallholder farmers in northern Haiti. Since 2012, PISA has built direct relationships with farmers, buying wet, unfermented beans at a higher price and supporting them to recognise the value of the crop they grow.
Post-harvest processing takes place at PISA’s centralised fermentation facility in Acul du Nord, where the beans are carefully fermented, dried, and hand sorted according to strict organic-certified protocols. This consistency of process, alongside sourcing from a focused region and farmer network, helps preserve the quality and character of the cacao.
Crafted in small batches by Table Chocolate, this bar reflects both origin and craft, from Haitian soil and farmer-led growing to careful bean-to-bar making in Liverpool.
