Made by Liverpool’s first bean-to-bar chocolatiers, Table Chocolate, this Dominican Republic 43% white chocolate bar is rich, creamy and deeply comforting. With notes of brown butter, dulce de leche and brioche, it has the warmth of caramelised milk, soft sweetness and a gentle baked richness that makes it feel indulgent without being overly sweet.

The cacao is sourced through Öko Caribe, founded in 2006 by Adriano de Jesús Rodríguez and Gualberto Acebey Torrejón with the aim of raising the standard of quality cacao in the Dominican Republic. Working closely with smallholder farmers and around 180 local workers, Öko Caribe has built a model rooted in quality, traceability and long-term relationships.

The Trinitario cacao is harvested between March and August, then carefully fermented for five to six days and dried for an average of ten days at Öko Caribe’s own facility. Each batch is hand sorted and processed according to organic-certified protocols, helping ensure that only high-quality cacao makes its way into the final chocolate.

Crafted in small batches by Table Chocolate, this bar brings together Dominican cacao, careful fermentation and Liverpool bean-to-bar making in a white chocolate that feels generous, layered and quietly special.
