Rooted in the dishes Sami grew up with, the book brings together bold, colourful recipes that centre vegetables, grains, and the kind of cooking that is meant to be shared. From slow, comforting dishes to bright, flavour-led plates, each recipe reflects a way of eating that is generous, intuitive, and deeply tied to home.

There is a natural rhythm to the book, moving from everyday meals to more abundant spreads, with an emphasis on building a pantry, preserving ingredients, and filling the table with dishes that invite people to gather. It is not just about individual recipes, but about how food is prepared, served, and experienced together.

With over 100 recipes, Boustany becomes both a practical cookbook and a reflection of Palestinian food culture, where cooking is an act of care, connection, and continuity.

Sami Tamimi is a Palestinian chef and author whose work is rooted in the food and culture of his homeland, shaped by memory, seasonality, and a deep connection to place.

Having grown up in Jerusalem, his cooking reflects the rhythms of everyday life, where meals are built around sharing, abundance, and the generosity of the table. Through his work, he has played a significant role in bringing Palestinian cuisine to a wider audience, while remaining grounded in the flavours and traditions he grew up with.

In Boustany, he turns inward, offering a more personal expression of his cooking, one that celebrates vegetables, grains, and the kind of dishes that are cooked, shared, and returned to over time.
