Written by Fadi Kattan, Bethlehem is a deeply personal journey through one of Palestine’s most historic cities, where food, memory, and community are closely intertwined.
Through recipes and storytelling, the book moves beyond the kitchen, introducing the farmers, producers, and artisans whose work shapes the region’s culinary landscape. From vineyards and wheat fields to olive groves and spice shops, each element reflects a way of life built on knowledge passed down through generations.
At its heart are Fadi’s own memories, from time spent cooking with his grandmother, Teta Julia, to the influence of Teta Emily, whose presence lives on in some of the book’s most personal dishes. These stories sit alongside the recipes, creating a sense of place that feels both intimate and expansive.
Set against a backdrop of resilience, Bethlehem offers not just a collection of dishes, but a portrait of a city that continues to hold onto its culture, community, and traditions.
This book supports the sharing and preservation of Palestinian culinary heritage, highlighting the people, stories, and traditions that continue through food.
A portion of proceeds across our wider collection is shared with marginalised communities through our ongoing partnership with human rights organisation Restless Beings.
For every order placed, we also plant a tree, contributing to long-term environmental restoration.
Fadi Kattan is a Palestinian chef whose work is deeply rooted in the city of Bethlehem, where he brings together food, culture, and storytelling.
Through his cooking, writing, and work with local producers, he highlights the richness of Palestinian culinary traditions while creating space for the people behind them to be seen and recognised.
His approach is both personal and place-led, drawing on family, memory, and community to shape a body of work that reflects the depth and continuity of Palestinian food culture.
We support makers and farmers near and far through fair wages and thoughtful partnerships.
We choose natural, biodegradable materials and eco-conscious or plant-based dyes where possible. While we avoid single-use plastic, we reuse any that arrives with deliveries to reduce waste.
