Za’atar is more than a seasoning in Palestine, it is part of everyday ritual, memory, and identity. Found in almost every kitchen and often served at the breakfast table, it is a staple that connects generations through simple, shared food.

This blend brings together wild thyme, sesame, and sumac, carefully balanced to create a flavour that is earthy, nutty, and gently tangy. In Palestinian folklore, za’atar is said to aid concentration, which is why many children grow up with a za’atar and olive oil sandwich tucked into their schoolbags each morning.

Produced by Rift Valley Farms, the ingredients are grown and harvested across the West Bank with care for both land and tradition. Crops are hand-harvested and processed locally, ensuring freshness while supporting farmers to continue practices that have been passed down over generations.

Farming avoids herbicides and harmful chemicals, with a focus on soil health, biodiversity, and responsible water use. Alongside this, the collective continues to invest in partial solar-powered facilities, energy-efficient systems, and more sustainable packaging, working towards long-term stewardship of the land.

Rift Valley Farms is rooted in the Jordan Valley, working from its own family-owned land while collaborating with small and mid-sized Palestinian farmers across the region. Through shared knowledge and sustainable practices, they support both the land and the communities who depend on it. 

The wild thyme at the heart of this za’atar, known as Majorana Syriaca, grows across this landscape and has long been foraged and cultivated as part of Palestinian food traditions.

Women play an active role across the business, from leadership to the packing house in the village of Oja, reflecting a conscious move towards greater equity in agriculture while strengthening the community around it.
