Sumac is an essential part of Palestinian cooking, valued for the way it sharpens and brightens food without overpowering it. Made from dried red berries grown across the West Bank, it carries a clean, citrus-like tang that cuts through richness and brings clarity to simple ingredients.
Often used as a finishing touch, it is scattered over salads, onions, hummus, and labneh, or stirred into dishes to add depth and balance. Like much of Palestinian food, it is modest in form but deeply considered, shaped by land, season, and the need to make the most of what is available.
This sumac is produced by Rift Valley Farms, a family-run collective working closely with farmers across the West Bank. Berries are harvested by hand and processed locally, preserving both their flavour and the value of the work within the community.
Farming practices avoid herbicides and harmful chemicals, focusing instead on soil health, biodiversity, and responsible water use. Alongside this, the collective continues to invest in partial solar-powered facilities and energy-efficient systems, working towards a more sustainable future for Palestinian agriculture.
