The Sudanese Cookbook by Omer Al Tijani
Step into the deeply layered and generous world of Sudanese home cooking with over 100 carefully documented recipes that honour one of Africa’s most underrepresented culinary traditions. The Sudanese Kitchen is the first of its kind to document Sudanese cuisine in English as a comprehensive body of work, lovingly compiled by British-Sudanese chef and food archivist Omer Al Tijani.
Through personal anecdotes, regional insights, and thoughtfully written recipes, Al Tijani guides readers through Sudan’s rich tapestry of cuisines, shaped by migration, trade routes, religion, and centuries of cultural exchange. From slow-cooked stews and fragrant spice blends to breads, dips, and celebratory dishes, the book captures the fascinating fusion of African and Arab foodways that define Sudanese cooking.
Designed to be accessible, the recipes use easy-to-find ingredients, offer practical guidance, and include adaptations for modern diets, including vegan options. More than a cookbook, this is a work of culinary preservation, a timely and important tribute to Sudan’s cultural depth during a period of ongoing upheaval.
Beautifully presented and rooted in storytelling, The Sudanese Kitchen invites you not only to cook, but to understand and honour a cuisine that has long deserved wider recognition.
